[KSZÍ] Pinot Noir pearly wine 2016

Our pearly wine is named after the 14th letter of the Greek alphabet. It is the sound you hear, when you open up a bottle of refreshing KSZI and the pearling bubbles come to the surface.
It is a delicate shade, “ballerina”, amongst the full-bodied red wines of Villany: it is playful, ethereal, lively, intensive and elegant.
From the colour to the fragrance this wine shows an elegant, ethereal ‘pink’ character. The Pinot Noir variety gives a lively fruitiness, elegance and depth to the sip. On the palate it is full bodied and juicy – the notes of exotic fruits are rounded off by a long lingering finish with the hint of pink grapefruit.
Serve chilled as an aperitif, with light starters, or just on its own.
Vegetation started early in 2016. We got luck and did not have any extremity, the vines were not frightened and the summer was pleasant, without heat alerts and with enough wet. We started the harvest on the 1st of September and the ideal, warm, dry “late summer” weather lasted till the middle of October. The balanced growth delivered concentrated aromas, the harvested grape was well-balanced with good acidity and sugar level.

100% Pinot Noir – the variety shows its face now as a pearly wine.
Made from the fine must (meaning without pressing) of pinot noir. The fine must, which flows out by itself, is clearer and better quality; it is the “soul of the grape”. Fermentation was done in cooled stainless steel tanks (on 15°C). As a result we got a light, bright rosé base wine, to which we added carbon dioxide (2,5 g/l) in several steps during the bottling to achieve a light, gentle bubbling. Pearly wine is similar to sparkling wine, but it contains less carbon dioxide.
